18-20 apples
Sugar (optional if you don’t want added sugar)

1. Wash apples.
2. Cut apples and remove the seeds. You can leave the peels on.
3. Add apples to a large pot with barely enough water to cover them.
4. Heat the apples to boiling. Cover the pot. Lower temperature to medium and allow to simmer for 25 minutes.
5. Place a filtered sieve into a pitcher or jar.
6. Spoon juice into sieve. Mash apple chunks carefully if they get into the sieve.
7. When the juice is cool add sugar and cinnamon to your liking.

Pumpkin Cupcakes 



1 cup flour
1 tsp pumpkin pie spice
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

1 cup canned pumpkin puree

Your favorite frosting. These go great with buttercream.

1. Heat oven to 350 degrees. Spray nonstick cooking spray on muffin pan.
2. Combine dry ingredients
3. In a separate bowl combine wet ingredients. Add to dry ingredients. Stir just until combined.
4. Pour into muffin tray
5. Bake for 15-20 minutes. Allow cupcakes to cool and frost.

Butternut Squash Soup


2 butternut squashes. Cut them in half and remove seeds.
1 onion, sliced
1 inch ginger, minced
1 clove of garlic, minced
1/2 tsp cinnamon
5 cups chicken or vegetable broth

1. Bake squash in oven at 375 degrees for 50 minutes. Peel squash and cut into chunks.
2. Add all ingredients including squash to your slow cooker.
3. Cook on low for 4-6 hours.
4. Puree soup or mash until thick. Add parsley just before serving.
